The Kitchen Sink Gourmet Breakfast
Serves: 3-4
  • 3 slices leftover bread, crumbled
  • ½ cup cheese, Feta or goat cheese, or both!
  • 1 egg
  • 4 scallions or chives, minced, minus the white parts (I used fresh garlic chives)
  • Parsley, minced, amount to your taste
  • A pinch of black pepper
  • Salt to taste
  • Corn oil to fry
  1. Beat egg in a bowl. You may need to add another egg later if you need more to hold the patties together. Add the salt and black pepper and whisk. Crumble cheese and throw it into the bowl. Add in minced parsley and scallions. Toss in crumbled leftover bread. Mix them all well with a spoon. Heat about a half-inch of oil in a non-stick frying pan. Form the mixture into patties about ¾ inch thick and as big as you like. Mine were about the size of a burger bun. Fry patties in the oil until lightly golden brown and the cheese is melted. Serve immediately with your choice of egg and breakfast meat.
