Penne alla Vodka
From Wikipedia: Penne alla Vodka is an Italian pasta dish always made with vodka and penne pasta often with heavy cream, crushed tomatoes, onion, and sometimes sausage or bacon.
How it started remains a subject of debate, but adding vodka and cream to marinara sauce became a fad in the 1980’s. The result is a sweet creamy sauce with a distinct tomatoey tang. Many believe that, while the vodka does not impart any flavor to the sauce, the alcohol releases more flavor from the tomatoes. Whatever it does, I like it. I was unhappy with the jarred vodka sauces and decided to find a good recipe for a homemade version. I found several recipes and they all contained similar ingredients and directions. Some used tomato paste, others canned crushed tomatoes. Some called for chicken stock, some not. I decided to tweak a few recipes to create my own version using ingredients I had on hand. You can find the recipe for the Vodka Sauce HERE. I made the sauce last week and froze half which we enjoyed tonight with penne pasta and grilled, chicken garlic artichoke sausage. Garnish with Parmesan cheese and dinner is served!
