This month for Ina Fridays we are posting main dish recipes from Ina Garten.
I recently watched a re-run of The Barefoot Contessa, circa 2011, where her friend Laurant Tourondel, came over to “the barn”and made burgers with her. She ended the segment by saying that she wouldn’t make burgers any other way from that point on. So I went back and looked at some of Ina’s burger recipes and wondered how she would make them after being schooled in burger making. A recipe from 2007 for Bleu Cheese Burgers screamed out for a “do-over.” With the addition of eggs and bread crumbs to the ground beef, the original recipe sounded a bit like meatloaf on a bun. I decided to makeover Ina’s bleu cheese burger in the style of Laurant Tourondel as my main dish posting for Ina Fridays.
The technique for the LT burger is as follows:
Heat a griddle medium hot. Using your hands, form the beef into a 1/4-inch-thick patty, trying not to press the patty too much or the meat becomes tough and the patty does not cook properly in the center. Brush some butter on both sides of the patty, season with salt and pepper and cook on the griddle for 2 to 3 minutes. Flip the burger, place the cheese on top and continue girdling for 2 to 3 minutes for medium rare.
The burger Ina cooked with Tourondel had guacamole, pickle, lettuce, and cheese. But remember, I was remaking Ina’s 2007 bleu cheese burger. so I omitted all those things. My burger followed the LT technique but, just before removing from the griddle, I added slices of blue cheese. I served it with steak sauce, tomato, and arugula as called for in the original recipe. I think Ina would agree, this updated burger is better!
