We are vacationing on the California coast in our RV. I thought about meals before leaving home. This would be our first trip with Tucker and, while we like to eat out when we travel, we decided to do less of it on this trip. I tried to come up with easy to prepare dishes I could make in the RV. I spotted these no-boil lasagna pasta sheets and thought they would be perfect for lasagna roll-ups.
They worked perfectly! Here’s how I created this, easy, delicious dish.
I started by browning ground beef until very crumbly. I used a spatula edge to really break up the browned meat to make rolling easier.
I added tow large garlic cloves, chopped fine and a jar of premium marinara sauce. I like Rao’s sauce.
I simmer the sauce briefly to cook the garlic. Next I needed to soften the pasta sheets a bit to make them more pliable so I made a slit in the bag and microwaved it for 30 seconds. Worked perfectly. I spread a layer of Ricotta cheese on the pasta.
Next, a layer of cooked spinach with the water squeezed out went on top.
I followed with a layer of meat sauce.
Finally, I added grated mozzarella and parmesan cheese.
Then I rolled them up.
I placed the rolled up lasagna on a foil lined baking sheet and covered with foil.
I baked the dish in a 350 degree oven for 20 minutes. I added a little cold marinara sauce as garnish and served them piping hot. hey were delicious and so easy to make.
