Michael usually sleeps through breakfast so if I feel like anything besides coffee I am free to do it my way. That meant green peppers and red jalapeños this morning! I need to use up a few fingerling potatoes I bought at the Farmers Market as well as a red jalapeño and green pepper from my garden.
Chop the vegetables and sauté in olive oil and butter. Add salt and pepper to taste.
Fry an egg anyway you like it, in my case, over medium. Toss it on top. Lay the whole thing down on a wrinkled placemat from the Fourth of July.
Carry it around by the handle while you make coffee, eating as you go.
