Where have I been for the last 18 months? I just noticed a product in the produce section that I hadn’t seen before, a blueberry muffin mix by Concord Foods. It was first introduced in January 2012. The product is kept refrigerated in the produce case, ready for you to add blueberries, egg, and milk. I was leery at first in case I didn’t find time to make the muffins right way. I was pleasantly surprised to see that the expiration date on the box was almost nine months away! Recalling my two pregnancies I realized that nine months is a very long time! I bought the muffin mix a few days ago and decided that today was the day to give it a try. I am expecting overnight guests in a few days and thought these might be nice to keep on hand. I wanted to put my stamp of approval on them first, of course!
They could not be any easier to make. You open the pouch, put the dry mix in a bowl, add an egg, and a half cup of milk. Stir it with a fork, fold in a cup of blueberries, place the batter in the muffin pan and bake for 13-14 minutes. I topped the raw batter with clear sanding sugar which gave the muffins a sweet, crunchy top. The directions say to cool the muffins completely before serving but, really? Really? Who could do that, and why would they want to? With a stick of butter sitting on the kitchen counter, these muffin had a couple of minutes to cool down before they were split in half and a pat of butter placed in the middle. There are plenty more to eat cold but there would never be a fresh out of the oven, warm one again if I let the moment pass.
I shared a warm, buttered blueberry muffin with Michael and we both thought they were terrific. I think the thing that sets this muffin apart from other box mixes is that you add fresh (or frozen) blueberries instead of the watery canned blueberries in the other. The cake stayed nice and white without the blue grey discoloration you often get with canned blueberries. I especially like the tart flavor of the fresh berries. I love the combination of blueberries and lemon and I couldn’t stop myself from grating a little lemon zest on top of the batter before baking. It perfectly complemented the vanilla and blueberry flavors of the muffins. I am planning to hit the store later today and buy a couple more boxes of this great muffin mix and make them for my friends when they visit. You won’t be disappointed if you decide to give this product a try.
