I love the line of skillet sauces by Rick Bayless of Frontera Restaurant fame. Tonight I decided to make cheese enchiladas using his Red Chile Enchilada Sauce. I decided to pair it with El Torito Corn Cakes, using the package mix.
I did not follow the package recipe for cheese enchiladas but put my own spin on it. They were very good. I forgot to buy sour cream so it felt as if something was missing but I can’t fault Rick Bayless for that! The sauce has red chiles and garlic. The recipe on the back says it makes 4 enchiladas. I tried to stretch it to six but they needed more sauce. If you try it, make just four enchiladas per package of sauce.
Michael and I have enjoyed the corn cakes at El Torito for years. I was excited when they came out with the package mix. I have purchased the mix on a couple of occasions and it always expires before I get around to using it. The recipe calls for a can of creamed corn, an ingredient I simply never use and never have on hand. Today I made a trip to the store for a can of cream style corn so I could make these corn cakes before the expiration date. They were delicious, exactly like the ones at El Torito. They were good enough to make me add cream style corn to my pantry!
I would definitely give both of these products a thumbs up. They are both so convenient to use and taste great!
