Buffalo Chicken Sandwich

I needed a hot wing fix but didn’t want to go to the trouble to make hot wings. I decided to create a Buffalo Chicken Hot Sandwich. With Havarti cheese, fresh lettuce, tomato, and blue cheese dressing it was quite good. I served mine on Foccacia rolls but any old roll would do. Well, not any old roll, but you knew that. I served the sandwiches with sweet potato fries and honey mustard dipping sauce.

  • 1 large boneless, skinless chicken breast
  • 2 Sandwich rolls
  • ¼ cup Franks Buffalo Chicken Sauce
  • 2 TBS melted butter
  • 4 Tablespoons Blue Cheese dressing
  • Lettuce leaves
  • Sliced tomatoes
  • 2 slices Havarti cheese or whatever you like
  2. Slice the chick breast in half lengthwise. Place each half between 2 sheets of plastic wrap and pound until ½ inch thick.
  3. Season with salt and pepper to taste. Heat a grill to medium high. Place the chicken pieces on the grill.
  4. Melt the butter and add it to the Franks’ Buffalo Sauce. Stir to combine. Use this exactly as you would a regular BBQ sauce. I waited until the chicken was almost done before adding the sauce to avoid burning.
  5. When the chicken is done and the sauce is hot, top each piece of chicken with the cheese. Leave the chicken on the grill until the cheese melts.
  6. Warm the rolls and slather each half with blue cheese dressing.
  7. Place the chicken on the bottom roll and add more sauce as you like.
  8. Top with the veggies and roll and enjoy piping hot.
