Michael is home from his trip to the coast. I managed to lock the house up tight before picking him up in town last night. I didn’t realize that the keys on my ring belonged to the house we just sold. Yep, we were locked out in the cold with a new dog on a leash. Finally Michael broke into a side door and we were rescued. I am withdrawing from the codeine I took for two months for a dental fiasco. I couldn’t sleep last because of the heebie-jeebies. My dining room carpet is soiled with red dirt from certain people coming in with their boots on. Minor mayhem in the grand scheme of things. I finally dozed off to sleep in the wee hours of the morning only to be awakened shortly thereafter by crowing chickens and braying donkeys. Everybody was hungry, including me. I was lured to the blueberries in the market yesterday by price but sold by how great they looked. Blue, plump, and fresh. I bought a pint. This morning I decided to use those blueberries to make pancakes to get my day started. A crisper drawer full of lemons encouraged me to go with Lemon Blueberry pancakes. I took the easy way out and used a baking mix but they were still great. If you want to make the pancake mix from scratch, go for it. I am a little too foggy for anything too complicated.

- 1 cup Krusteaz buttermilk pancake mix
- ⅔ cups water
- ¾ cups fresh blueberries
- Zest of ½ lemon
- 1 TBS vegetable oil
- Butter, syrup, and confectioner's sugar for garnish
- Place the pancake mix in a medium bowl. Add the water and mix lightly with a fork. DO NOT OVERMIX! You want lumps in there. Without lumps, you will have tough pancakes. Add half the blueberries and the lemon zest to the mix. Add the oil to a griddle or large non-stick frying pan over medium heat. When the pan is heated, add the pancake mix, using an ice cream scoop for consistency. Spread the pancake into a circle. If there are large areas without berries you can drop them on the pancake now. Bubbles will form on top of the pancakes as they cook. As soon as the first bubbles burst, use a spatula to flip them over. Cook on the other side until done and remove to a plate. Garnish with the reserved blueberries, confectioners sugar and syrup.
