This is my approach to hot cross buns, an Easter tradition in many homes. Too lazy to bake and hungry for breakfast, I created these tasty little morsels.
- Brown ‘n Serve dinner rolls, 2 per person
- Melted butter
- Salt and pepper to taste
Cut a circle in the dinner roll and scoop out the inside. Using your fingers, press the roll to make more room for the egg. Generously brush the inside of the roll with melted butter. Crack an egg and drop it into the hollowed out roll. Small eggs work best. If it overflows, let some of the egg white drain out into a bowl or the sink before dropping the egg into the roll. If it overflows it burns and stinks up the house. Bake in a 350 degree oven until the yolk is set to your liking. Be careful not to overcook. Starting with Brown ‘n Serve rolls helps to keep the bread from drying out. Garnish with salt, pepper and chives. Enjoy hot.
