Fast and Easy Chili

Dinner time came out of nowhere last night. I had no idea what I was going to make. Nothing was thawed and very few fresh ingredients were on hand. A quick trip to the freezer and pantry and I was inspired to make chili. I used the microwave to quick thaw a pound of grass-fed ground beef. I didn’t have an onion but I had four shallots. I didn’t have tomato sauce but I had a brand new bottle of ketchup. I had a couple of cans of pinto beans, which worked perfectly since I am not a fan of kidney beans. For garnish I had avocado, shredded cheese, and sour cream. I even had a package of Marie Callendar’s cornbread mix. Fast forward less than an hour and a pot of chili was ready to eat.

 

 

Fast and Easy Chili
Ingredients
  • 2 TBS olive oil
  • 4 sliced shallots
  • 1 pound ground beef
  • 2 TBS chili powder
  • 2 cloves garlic, pressed
  • 1 TBS ground cumin
  • ½ TBS salt
  • 2 tsp freshly ground black pepper
  • 1 cup ketchup
  • 2 cups beef broth
  • 2 cans pinto beans, drained
  • Avocado, cubed
  • Cheddar Jack cheese, shredded
  • Sour cream
Instructions
  1. Heat the olive oil in a dutch oven. Add the shallots and cook until translucent. Add the ground beef and cook until crumbled and browned. Add the spices, ketchup, beef broth and bring to a boil. Cook for 20 minutes over low heat. Add the pinto beans and cook for about ten minutes. Serve in bowls, garnished with cheese, avocado, and sour cream. Enjoy with a slice of cornbread with butter and honey.

      I love chili cheese fries so, when I found myself with little else to make for dinner, I went for it. I used frozen french fries which I cooked in hot oil instead of the oven. I wanted that salty, slightly greasy fry. I idn't have any canned chili but I did have a package of Carroll Shelby Chili Makin's. I didn't have tomato sauce so I used ketchup. I didn't have kidney beans so I left them out. I started by browning a pound of ground beef, adding the seasoning mix, ketchup, and water. I cooked it until it looked and tasted right. I then deep fried the potatoes. I piled the fries on a plate, loaded it with chili, grated cheese, chopped onion, and home made pickled jalapenos. This is not meant to be a recipe just a nod to making do with what's on hand. Pass the Tums and Rolaids please!

    We were going to be working outside much of the day so I needed a quick meal that would cook itself. I decided to put a beef stew in the crockpot. We just finished dinner, adding homemeade sourdough bread with the stew and it was delicious. Michael liked the carrots because while they were cooked, they weren't mushy. My favorite part is always the onions. They were still nice and crunchy due to them being added at the end of the cooking time.         Crock Pot Beef Stew Ingredients 1 pound stew meat (get the good stuff) 1 (26 oz) package beef stock Salt and Pepper 3 TBS olive oil 1 tsp paprika 1 tsp onion powder 2 TBS tomato paste 4 - 5 red potaotes cut in half 2 large carrots quartered 2 small onions quartered Instructions Heat the oil in a large frying pan. Salt and pepper the chunks of beef to your liking. Brown the beef in the olive oil on all sides. Dump the meat and the juices into a crockpot.     Yesterday was National Cheeseball Day. I desperately needed something to take my mind off bombings, explosions and sinkholes. Like many of you, I too decided to celebrate National Cheeseball Day. I knew a round cheese ball covered in chopped nuts would take about ten minutes to put together. I needed a much longer timeout. So this is what I came up with.   Here's the recipe! Cheese Ball Ingredients 2 (8 oz) packages cream cheese, at room temperature 1 cup grated cheddar jack cheese chopped chives to taste, I used about 1/4 cup Red chili flakes or chili paste to taste Instructions Place the room temperature cream cheese in a bowl. Add the grated cheese, snipped chives and red chili. Mix together with a fork. Roll cheese into a ball and cover in herbs, pecan chips, sunflower kernels, or anything else you like. Or make yourself a chicken! Serve with crackers. Wheat Thins work well with this cheese ball. 3.2.1753
