I spotted this in the store a couple of days ago. What caught my eye was the small size of the package in relation to the other cake and bread mixes. I thought it might be for a mini version of banana bread but it makes full sized loaf. I decided to give it a try.
The preparation could not have been easier. Lightly beat an egg, mash a couple of bananas, add some water and the mix and bake in a loaf pan. I added a half cup of chopped pecans because I love banana nut bread.
We didn’t wait for it to cool before slicing it, as you can see in the picture. I certainly think it would be worth keeping a box or two in the pantry for those days when a couple of over ripe bananas sit on the counter, looking pitiful. I would recommend adding a touch of spice to the mix and enjoying it as a simple, quick way to use those bananas without hauling out the flour, sugar, sifter and mixer. The second slice was better than the first by the way. I think letting it cool made a difference. I will buy it again.
