You can read the post about my berry picking adventure HERE. We really enjoyed this pie and homemade ice cream.
- 4 cups fresh blackberries ( frozen will work too)
- 3/4 cup granulated sugar
- 1/4 cup all purpose flour
- 1/4 cup cornstarch
- 2 TBs butter cut into tiny pieces
- Pastry for bottom crust (whatever recipe you like best or a prepared crust from the market)
- 3/4 cup quick oats
- 1/2 cup brown sugar
- 1/2 cup all purpose flour
- 1/2 cup butter cut into small pieces
- 1/2 cup chopped pecans
Line a pie pan with a prepared crust. Brush bottom of pie crust with egg white to help keep it from getting soggy. Wash blackberries well, picking out any stems, leaves, or unripe berries. Place berries in a large bowl and add flour, sugar and cornstarch. Gently mix to coat berries and evenly distribute dry ingredients. Pour berries into crust and top with dots of butter.
To make the topping mix all ingredients in a bowl until they are incorporated but still crumbly. Use your hands to place the topping on berries spreading evenly to the crust. If desired a add a sprinkle of coarse sugar to the top of the pie. I also drizzled a little of the leftover berr
Bake at 400 degrees until the topping is golden brown and the filling is bubbly. Mine baked about 35 minutes, the last five minutes with foil over the top to keep it from getting too brown and on the bottom rack to brown the bottom crust.
Cool on a wire rack. Serve warm with vanilla ice cream on top.
