This delicious, spicy snack cake can be made using your sourdough starter. If you don’t have any starter get some going. You can order starter online or capture wild yeast at home and make your own starter.
1 cup active starter (at room temperature)
1 cup all purpose flour
1 cup applesauce (use the chunky style for best results)
1/2 cup butter at room temperature
1/2 cup granulated sugar
1/2 cup light brown sugar
1 large egg, slightly beaten
2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon gorund allspice
1/4 teaspoon ground cloves
1/2 cup raisins (soak in hot water to plump, then drain thoroughly)
1/2 cup chopped pecans (optional)
Mix the starter in a large bowl with the flour and applesauce. Set aside. Cream sugars with butter until smooth. Add the egg and mix until light and fluffy. Add the salt, spices, and baking soda. Pour into the bowl with the starter, flour and applesauce mixture and stir to combine. Fold in raisins and nuts.
Pour the cake batter into a greased and floured 9×13 glass baking dish. ( I use nonstick spray for baking instead of greasing and flouring) Bake in a preheated 350 degree oven for 30 minutes or until a toothpick inserted in the center comes out clean.
