Please forgive the original photo. I revisited the recipe and took a new photo. They now taste as good as they look!
These delicious patties can be made with leftover cooked salmon or canned salmon. I used leftovers from last night’s grilled salmon dinner.
1 1/2 cups cooked salmon
1 1/2 teaspoons Old Bay or Potlatch Seasoning
1 small white onion diced
2 tablespoons cooking oil
1/2 cups bread crumbs (storebought or homemade)
1 large egg
1 tsp salt
2 tablespoons fresh chopped herbs (I used flat leaf parsley and garlic chives)
Ground black pepper to taste
Dash of hot sauce
Crumble the cooked salmon into 1/2″ pieces. Leave some nice sized chunks. Set aside.
Heat oil in frying pan on medium heat. Add diced onion and cook until just translucent but not brown. Leave them a bit crunchy. Drain onions.
Add the cooked onions, dry bread crumbs, herbs, egg and spices to the salmon.
Toss just enough to incorporate ingredients.
Add oil to frying pan or grill pan and heat on medium. Shape patties. Fry patties in hot oil until golden brown on both sides and heated through. Makes four to five patties depending on size.
Serve immediately with a side of tartar sauce.
